- 2 medium (about 300g) Fresh mackerel (ikan kembung) (cleaned and cut into halves)
- 1 tablespoon Cooking oil (preferably canola or sunflower)
- 1 large Brown onion (finely sliced)
- 3 Garlic cloves (minced)
- 1 inch Ginger (grated)
- 1 sprig Curry leaves (daun kari)
- 1 stalk Lemongrass (serai, bruised)
- 1 tablespoon Chilli powder (or to taste)
- 1 teaspoon Coriander powder
- 1/2 teaspoon Turmeric powder (kunyit)
- 2 tablespoons Tamarind juice (air asam jawa)
- 1 medium Tomato (cut into wedges)
- 4 pods Okra (lady’s finger) (cut in halves) - pilihan
- 1/2 cup Coconut milk (santan, light)
- 1 cup Water
- to taste Salt
- 1 small knot Pandan leaf (optional, for aroma) - pilihan

Heat oil in a pot over medium flame. Sauté onions, garlic, and ginger until fragrant and golden.
