Sederhana

Egg Tosai is a beloved staple in Malaysian cuisine, drawing inspiration from the vibrant South Indian communities in Malaysia. This savoury pancake, known locally as 'tosai telur', is enjoyed by Malaysians of all backgrounds for its crispy edges, soft centre, and protein-rich egg topping. Traditionally served for breakfast or lunch in mamak stalls and homes across the country, Egg Tosai is often paired with coconut chutney (sambal kelapa) or dhal curry. The fermentation of the batter gives it a slight tang, while the egg adds richness and depth. Egg Tosai is an excellent choice for anyone seeking a wholesome, satisfying meal that reflects Malaysia’s multicultural heritage. The use of local ingredients like daun kari (curry leaves), onions, and minimal oil makes it a lighter alternative to many fried snacks. Whether enjoyed with a side of tangy chutney or spicy dhal, Egg Tosai is a testament to Malaysia’s rich culinary tapestry and commitment to flavourful, balanced meals.

Bahan-bahan(untuk 1 large Egg Tosai per serving)

  • 1 cup Rice (beras) (Soaked overnight)
  • 1/4 cup Urad dal (kacang dal hitam) (Soaked overnight)
  • 3/4 cup Water (For blending and batter adjustment)
  • 1/2 tsp Salt
  • 2 large Eggs (Room temperature)
  • 1 small Onion (Finely chopped, bawang merah)
  • 1 sprig Daun kari (curry leaves) (Finely shredded) - pilihan
  • 1/4 tsp Black pepper (Freshly ground) - pilihan
  • 1 tbsp Cooking oil (Can use minyak kelapa (coconut oil) for extra aroma)
  • 1/2 tsp Fenugreek seeds (halba) (Optional, for fermentation boost) - pilihan

Arahan

  1. 1

Rinse and soak the rice and urad dal separately with plenty of water for at least 6 hours or overnight. If using fenugreek seeds, add them to the dal during soaking.

    6 hours (soaking)

Longer soaking improves batter texture and enhances fermentation for a lighter tosai.

  2. 2

Drain soaked rice and dal. Blend separately with a little water until both are smooth. Combine both batters, add salt, and mix well. Cover and ferment in a warm place for 8-12 hours or until the batter bubbles.

10 minutes (plus 8-12 hours fermentation)

Fermentation time varies with temperature; the batter should double in volume and develop a pleasant sour aroma.

  3. 3

Beat the eggs lightly in a bowl. Add chopped onions, daun kari, and black pepper. Set aside.

    5 minutes

Adding onions and curry leaves to the egg gives extra fragrance and a Malaysian twist.

  4. 4

Heat a non-stick or cast-iron tawa (flat pan) over medium-high heat. Lightly grease with a few drops of oil.

    2 minutes

    A well-heated pan ensures a crispy tosai.

Kenapa hidangan ini sihat

Egg Tosai is a smart, health-conscious choice because it relies on whole grains, legumes, and eggs without excessive fats. The fermentation process enhances gut health, and the use of fresh local ingredients like curry leaves and onions adds vital nutrients and flavour. By controlling the amount of oil and serving with chutneys made from fresh coconut and herbs, you ensure a nutrient-dense, satisfying meal ideal for calorie-conscious eaters.

Egg Tosai provides a balanced combination of complex carbohydrates from rice, plant protein from urad dal, and high-quality animal protein from eggs. The fermentation process boosts the bioavailability of B-vitamins and aids digestion. Onions and daun kari offer antioxidants, while minimal oil keeps overall fat low. This dish is naturally gluten-free if made without wheat and provides iron, magnesium, and potassium for daily nutrition.
